This microbially produced rennet called Fromase® is made by DSM in France. It is derived from the pure culture fermentation of the organism Rhizomucor miehei. This cost-effective coagulant has a longer shelf life than liquid rennets and is suitable for all types of cheeses.  Note that for aged cheeses, you may prefer the results of using calf rennet. It is non-animal, kosher, and derived from a non-GMO origin.

Store at temperatures below 41F and away from direct sunlight.

Usage rate: Use 1/2 tsp per 2 gallons milk for hard cheese, use 1/3 tsp per 2 gallons for soft cheese.
